Blueberries

We're full into blueberry season here. A bit late but the berries are plentiful, big and juicy, and I'm indulging in a bit of a berry bonanza. I stopped at the produce store on my way home from my massage treatment this morning and bought another big box of the blue beauties. Bought some gorgeous Okanagan cherries, too. Mostly I've just been eating the berries sprinkled with a teeny bit of sugar and covered with creamy plain yogurt. OMG, so yummy. And they're good for me, too! bonus. Tonight when I was making my dinner I was watching Iron Chef America..they were doing all sorts of amazing things with cherries. I was inspired, so I decided to emulate those crazy out there chefs and use some of the blueberries in my main course. I made a stirfry with thinly sliced pork chops, onions, carrots, and added spaghetti squash (precooked and pulled in neat strands from the shell) and some chopped collard greens. I cooked all of this in a blackbean honey garlic sauce and a couple of handfuls of blueberries; it all cooked down into a lovely fragrant sauce..although it made everything an interesting purple. In spite of the colour, it tasted delicious. Things you can do with blueberries 101.
